Homemade Pesto

If you saw my last post on how to make chicken pesto quesadillas, here’s how I made that delicious pesto! (Don’t worry about substituting ingredients, or if you don’t quite have enough…I hear pesto comes out great no matter what!)

What you need:

2 cups fresh basil

1/2 cup extra virgin olive oil

1/3 cup pine nuts

3 medium-sized garlic cloves

Salt & pepper, to taste

Start with the basil and pine nuts, pulsing lightly in a food processor. Add the garlic and pulse a few times more. Next comes the olive oil (you’ll probably need to use a spatula to scrape down the sides, so it will all mix more smoothly). Add as much salt and pepper as you’d like, and you’re good to go! Many people also add parmesan cheese, but I can testify that it isn’t necessary…your pesto will still be perfect for quesadillas, pasta, sandwiches, and more!
